The global high-pressure processing market was valued at USD 12,109 million in 2017 and is expected to reach a value of USD 25,821 by 2023.
High-pressure processing (HPP) is a non-thermal technology developed with the aim of retaining the natural flavors and colors of food products while avoiding undesirable microbiological changes to increase food safety. Pressure is a process of preserving and sterilizing food, in which a product is processed at high pressure, leading to the inactivation of certain microorganisms and enzymes in the food. Most bacteria are killed at 60,000 pounds per square inch of pressure, and the pressure level of HPP may rise as high as 120,000 pounds per square inch. The process typically lasts for three to five minutes.

Adoption for HPP Technology to Extend Lifespan of Meat, Juices, & Other Food Products
Packed food products such as meat and juices have been the key drivers of HPP technology in the recent few years. However, the short lifespan of these products has raised a concern among consumers, which has created a demand for HPP technology, as HPP proves to be the most viable step in extending the lifespan of these products while maintaining high sensorial and nutritional qualities and improved food safety without added chemicals and artificial preservatives. Growing investment in the food processing sector to ensure quality and safety in food products is another significant factor fueling the market growth. For instance, as per the Department of Industrial Policies and Promotion (DIPP), the Indian food processing sector invested around USD 7.54 billion from April 2000 to March 2017.
